True to its brand promise “Luxury with soul”, this new menu delivers soulful food encompassing a variety of sumptuous, authentic cuisine for the discerning palate and taking its cue from internationally inspired recipes with European, Asian, and Caribbean influences.
The new menu features delicious dishes from award-winning Head Chef, Omar Layne. A veteran in the kitchen with 14 years of experience in the culinary industry, Chef Omar has created generous and flavourful dishes to celebrate the season, inviting guests to rediscover regional tastes from around the world.
Chef Omar has a deep affection for his cooking and satisfying the palates of his guests. He is very keen on experimenting with food, challenging his gastronomy, and reimagining the aesthetic approach. Renowned for his unorthodox style, Chef Omar’s specialty is taking traditional dishes and approaching them with modern techniques showcasing the expressions of the ingredients and how they can be manipulated in different ways.
His signature Surf & Turf dish is a delightful and unexpected juxtaposition featuring glazed duck confit, scallop, tataki, okra, smoked pineapple chow, duck pithivier, expression of squash and green oil – a must-try for the epicurean at heart.
To cater to every taste, The Gazebo menu also offers many eclectic options from classic comfort foods like Chicken & Waffles, Burgers and Cutters to traditional main dishes like Green Thai Curry, Lamb Shank, Fish of the Day, or Spicy Chicken. “We want to keep the food fresh and interesting throughout our breakfast, lunch and dinner services. And by pushing the envelope with new flavours and creations we want to allow our guests to experience something different but of course, we have still kept all of their traditional favourites,” said Chef Omar.
